Fried Fermented Fish Salad Becomes Popular Among Government Officials

Satun: Delicious fried fermented fish salad is drawing customers at the market in front of Satun Provincial Hall, thanks to vendor Ms. Khanitha Raptraitong, also known as Kana. She has been selling this unique dish for over a decade.

According to Thai News Agency, Ms. Khanitha has been selling fermented fish since her children were young, supporting their education through her business. However, with declining popularity of traditional fermented fish, she innovated by frying it and offering it at the agricultural market every Wednesday. Her main customers are government officials who appreciate the convenience of purchasing pre-fried fish, as frying it at home can be a challenge due to oil splatter. Priced at 50 baht per set, the fried fermented fish salad has become a favorite, with demand often exceeding supply.

The preparation involves using tilapia and Chinese fish, which are marinated, drained, and coated with flour before being fried to a crispy finish. The fried fish is then combined with lemongrass, shallots, sliced chili, and lime to create a flavorful salad. This dish is available for 50 baht per set, with an option for ground fish meat for the same price. The salad's balanced salty and sour taste, complemented by fresh chilies and shallots, has made it a hit among customers.
