Sukhothai: Grilled palm cake, a rare traditional dessert in Sukhothai Province, has been developed by the new generation of children, making ready-to-eat flour mixes and selling them online to generate income.
According to Thai News Agency, Grilled Palm Sugar Cake, a recipe from the Thap Jok family, is sold at their home in Village No. 10, Ban Khlong Plai Na, Tambon Ban Suan, Amphoe Mueang, Sukhothai Province. It is a local dessert that has been passed down for over 100 years.
Mrs. Sala Tapjok, 75 years old, the owner of the house, said that the grilled palm cake is her mother's recipe. It was originally made for eating within the family. After getting married and having a family, she started selling it 30-40 years ago. She sells it at markets and communities. It sells well and sells out every day.
Key ingredients are palm pulp, flour, cane sugar, kneaded together and mixed with coconut milk. Grill or sear in a pan, using banana leaves to line the dough. Sprinkle coconut meat on top of the dessert. Heat over charcoal, cover with banana leaves again, close the lid and grill until cooked. Turn the other side to cook all over. The taste is sweet and fragrant. Right now, it is not sold every day, but when available, neighbors or customers who know about it come to buy at the house.
In addition, Mrs. Sala's granddaughter, who works in another province, returned home and brought her grandmother's and great-grandmother's recipes for grilled palm cake and other desserts to make into a ready-to-mix flour and sell online. It can be mixed with bananas, pumpkins, purple sweet potatoes, and other fruits and steamed to make various steamed desserts more easily. There is also palm pulp and sugarcane juice packed in a good plastic seal package and sold through Facebook under the name 'Mae Sala brand ready-to-use Thai dessert flour, ancient Sukhothai recipe', which has attracted people from all over the country to order, resulting in additional income and also helping to pass on the dessert recipe.
